SOURDOUGHS
The cornerstone of Magpie's Bakery is our traditional sourdough. The sourdough begins with just three ingredients; flour, water and salt. Over three days these basic three ingredients are transformed into our signature bread. This attention to process, use of good quality ingredients and given time for proper fermentation results in a superior loaf with a chewy interior and flavourful thick crust.
Don't be fooled by the name: not all sourdough is sour. Sourdough starter is really just a natural leavening agent created from yeasts normally present in the air. The sourness in the finished bread depends on many factors such as length of fermentation, type of grain used, temperature as well as specific strains of wild yeasts and lactobacilli naturally present in the starter. At Magpie's Bakery we do not use any adjuncts such as vinegar, souring agents or souring salts to any of our sourdoughs.
